Aglianico – Controlled Designation of Origin

Red wine obtained from 100% hand-picked Aglianico grapes, coming exclusively from the Barile area. After destemming, the must, in contact with the pomace, ferments with the aid of selected yeasts in stainless steel tanks for approximately 2 weeks at a controlled temperature. Once racking has been carried out, it is left to mature for approximately 6 months in oak tonneaux, before a second passage in stainless steel for another 6 months. Once bottled, it continues its refinement for another 2 months.

Visual Analysis: Intense ruby ​​red, clear and consistent.

Olfactory Analysis: Intense and complex nose. Notes of red fruits such as cherry, currant, blueberry dominate. There are hints of spices including cinnamon and tobacco.

Taste Analysis: Dry and tannic wine. Good acidity and marked flavor overall very well balanced. The sensations of red fruit and spices are found on the palate. The months spent in tonneaux give the wine a delicate aromatic complexity.

Pairings: Ideal to pair with legumes, large red meats, also excellent with game of all kinds. Perfect with mature, blue cheeses and with meat-based first courses.

Primitive – Protected Geographical Indication

Red wine obtained from Primitivo grapes, harvested in the first ten days of September, coming exclusively from the Murgia area.

After destemming, the must, in contact with the pomace, ferments and refines in stainless steel tanks at a controlled temperature.

Visual Analysis: Light ruby ​​red with violet reflections.

Olfactory Analysis: Fresh and intense aroma of cherries and plums, together with notes of wild fruits.

Taste Analysis: Clean, warm and round flavor with soft tannins.

Pairings: Ideal to pair with legumes, grilled red meats but also game, such as wild boar, also grilled or braised.

Rosé wine obtained from Primitivo grapes, harvested in the first ten days of September, coming exclusively from the Murgia area.

After destemming, the must is fermented and refined in stainless steel tanks at a controlled temperature.

Visual Analysis: Bright cherry pink with coral highlights.

Olfactory Analysis: Aroma of red rose and magnolia

Taste Analysis: Warm and enveloping flavor balanced by freshness and minerality.

Pairings: Ideal to pair with fish starters, with rich but delicate dishes such as risottos, with white meats, but also with desserts and fruit.
